Menu Plan.... Monday?


Once again, we ended up eating out more than I had planned last week, mostly due to work pressures for me. I really missed being able to cook!

Has this ever happened to you? I was planning, in my mind, to be in two completely different places at the same time, but not realizing it. I spent the whole day yesterday finishing up a brain-torturing report urgently needed by one of my clients, and I was SO looking forward to a relaxing evening at home baking (I wanted to make some Butterscotch Finger cakes).

No sooner had I finished the darn report than there was DC, informing me there was a 7 p.m. showing of The Watchmen and we could just make it if we hustled across the street to the mediocre Mexican restaurant for dinner. Yes, of course, I had promised we would see the movie, since DC had missed the Thursday night midnight advance showing. Nooooooooo!!!!!!! What about my beautiful finger cakes? Every nerve in my body at this point was frazzled to the max. At the thought of eating greasy Mexican food, I just wanted to throw myself down on the carpet and start howling, 2-yr. old style.

DC just SO rocks. Evidently, he knows the look of a woman on the complete edge. After one glance at my stricken face, he said, "Or, why don't we go to Cool Runnings (our local Jamaican eatery and one of my faves)? There's a later showing too, we should have plenty of time."

Although I didn't get my blissful evening of baking, I did get to have a lot of fun with DC and DS. Our meal at Cool Runnings was just the thing to soothe my jangled nerves. After the movie, we topped off the night with hot fudge sundaes at Gypsy's Shiny Diner, one of the most fun restaurants in Cary.


I really should try getting my grocery shopping cycle worked around to where I can wait to do the weekly marketing until Monday a.m., when the stores are not so crowded. Instead, I kind of need to go today.

Here's my plan for the week. There are some repeats from last week that we didn't get to. Laura over at OrgJunkie.Com has a weekly roundup.

Saturday: Pan-fried stuffed Boneless Porkchops with Tomato Marsala sauce, fingerling potatoes, Green Beans Bolognese, butterscotch finger cakes

Sunday: Ooooops... we already got off. When I stirred my stumps at 7:30 last night to start cooking, my ground poultry was still not thawed. All were starving, so we ended up just ordering pizza. I did make some of Elle's Mexican Hot Chocolate Muffins (with my high-octane ancho and cayenne chile blend added!) for afternoon snacks for DS.

Monday:Kat & Matt's Peanut Turkey Burgers, sweet potato fries, Texas Cold Slaw, chocolate bits pudding
Tuesday: Jersey Girl's Mama's Sunday Gravy and pasta, green salad, spianata, lime-raspberry parfaits


Wednesday: Easy Cheese Souffle, spinach salad with toasted walnuts, bacon bits, mandarin oranges, Midnight Moon shavings (a wonderful "hard" goat cheese we need to use up) , raspberry vinaigrette, spianata. Donna's Ice Cream Cake Roll

Thursday: OUT, DS has concert at school (rescheduled due to snow last week)

Friday: Date night!! Woo-hoo!!!

Saturday:
Fried spaghetti pancake with leftovers from Jersey Girl's Mama's Sunday Gravy; salad, spianata.

Sunday:
Experiment for Gloria's Chili Cookoff

  3. Hi, Gloria-- Yes, I can't wait to get cooking! Although with chili, everything under the sun has already been done. I know more about chili from the Southwest than Tex-Mex. Don't know much at all about Tex-Mex chili.
